Christmas fruit cake – traditional & simple

Ingredients

eggs -5
fruit & nut mix – 5 cups 
brown sugar – 1 cup
butter – 1 cup
all purpose flour – 2 cups
baking powder – 2 tsp


Method
Fruit & nut mix :
  Wal nut, red cherrys, chopped dates, craisins( dried cranberries).
Caramel :
  Caramel is just sugar that is melted down until it becomes carmelized and then water is added to make caramel sauce.

  • Mix all the fruits and nuts in a bowl and soak in  some sort of liquor or brandy or artificial flavor one for 2 to 24 hours. I have used aritificial flavor run. Cover tightly, and store at room temperature.
  • Preheat oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream together butter and brown sugar until fluffy. Beat in egg. 
  • Whisk together flour, baking soda, (optional -cinnamon & powdered cloves).
  • Add the Caramel into the mix.
  • Stir in soaked fruit and chopped nuts. Scrape batter into prepared pan.
  • Bake in preheated oven for 40 to 45 minutes. Cool in the pan for 30 minutes, then sprinkle with 2 tablespoons rum(optional).
